Ingredients
- 2kg pork belly, skin removed
- 4 tbsp BBQ rub
- 100g butter, cubed
- 100g brown sugar
- 200ml honey
- 200ml BBQ sauce
Method

Cut pork belly into 4cm cubes. Season generously with BBQ rub.

Set smoker to 120°C with apple or hickory wood.

Spread cubes on smoker in single layer. Smoke for 2.5 hours.

Transfer cubes to a foil pan. Add butter, brown sugar, and half the honey.

Cover with foil and return to smoker for 1.5 hours.

Remove foil, add BBQ sauce and remaining honey. Toss to coat.

Return to smoker uncovered for 30-45 minutes until sauce is sticky and caramelised.

Serve immediately with cocktail sticks.
Pro Tips
- 💡Get pork belly from a butcher - supermarket cuts are often too thin
- 💡The cubes shrink significantly - start with bigger pieces than you think
- 💡Stir occasionally in the final phase to ensure even coating
- 💡Leftovers (if any) are incredible in mac and cheese or on pizza
